Our Story
Elbow Room is Canadian cuisine. By that we mean it’s a reflection of our country and its diverse groups with unique cultures – our menu is cherry-picked from the best of that Canada.
We like to call it a mingled-menu experience – where you can share plates or indulge on your own. Each dish is made from simple ingredients combined to create delicious, complex flavours.
Elbow room is the kind of place you come for a business lunch, a first date, a girls’ night out or a family dinner.
Ryan Blackwell discovered his passion for food at just 16 and never looked back. He went on to study culinary arts at SAIT where he fell in love with the creativity that comes with cooking. He completed his apprenticeship at the Hyatt Regency and took his first position as a banquet chef at Belgo Brasserie.
In 2008, the excitement of the Winter Olympics took Ryan to Vancouver where he became the Executive Sous chef of Glowbal Grill at just 23. After just over a year later, he was promoted to Sous Chef of the team that opened Coast, a 425 seat, 5-star restaurant. In 2011, Ryan became Chef De Cuisine at the award winning wine at tapas bar Bin 941 Tapas Parlour.
With Elbow Room, Ryan intends to bring something unique to the table and create an experience that brings families and friends together.
